Quick Thai Veggies with Shrimp!

Heyo, readers! I just love doodling around in the kitchen sometimes. The results end up... really yummy. This recipe came together so fast that I had time to blog it before going back to embryology studies. So, you go make it while I learn about duodenal atresia and the like. 

Thai Veggies with Shrimp
  • 1 serving shrimp, cooked as you like (I used baked popcorn shrimp because it's what we had on hand)
  • 1 cup broccoli slaw
  • 1/2 cup snow peas

Sauce: 1 Tbsp. peanut butter, microwaved until soft, mixed with ~1/2 tbsp. soy sauce, 1/2 tbsp sriracha, and a dash of fish sauce

Saute the broccoli slaw and snow peas, pour the sauce over the veggies when cooked to your liking, and add the shrimp!


~350 calories and delicious! :)

The. Best. Wrap. Ever.

Hi.

Yeah, it's been... forever... and I have a new last name, folks! Today's post will be brief, but not to worry-- I have quite the doozy in store. Soon (or, you know, sometime within the next 6 months)!

In the meantime, here's a wrap that's sure to tickle your tastebuds. Way better than biting them, which is what one of my very inconsiderate teeth did to my tastebuds today. Aaack.

Apologies for the lack of photo. I was famished after grocery shopping today so hubby and I scarfed these down ASAP. Use your imagination! Did I just type the word "hubby"!?

DYNAMITE 10-Second Wrap*

-1 6" whole wheat tortilla
-1 Tbsp hummus, any flavor (I used garlic)
-1 tsp basil pesto
-A few slices of turkey (or ham, or roast beef, or tofu!?)
-Small sprinkle of parmesan cheese
-Tomatoes, if desired

If you need help assembling a wrap... you need help beyond my current scope of practice ;) Just kidding!

*Actual work time may be slightly over 10 seconds.

Hope somebody out there is trying and enjoying this stuff. If not, I guess I have a great, extensive, ramble-y online cookbook in the works! Ha.
